Ingredients:
- 2 tbsp Chiang Mai Curry
- 1 can (14 oz) coconut cream
- 1-inch piece fresh galangal (or ginger), sliced
- 3 cloves garlic, peeled
- 1 small shallot, peeled and roughly chopped
- 1 tbsp fish sauce (or soy sauce for a vegetarian option)
- 1 tbsp lime juice
- 1 tsp brown sugar or palm sugar
- 1-2 cups chicken or vegetable broth
- 2 chicken thighs or tofu, cubed
- 200g egg noodles (or rice noodles)
- Garnishes: crispy fried noodles, lime wedges, chopped cilantro, sliced red onion, and pickled mustard greens (optional)
Instructions:
1. Blend the Base:
In a blender, combine the Chiang Mai Curry Spice Blend, coconut cream, fresh galangal, garlic, and shallot. Blend until smooth and fragrant.
2. Cook the Soup:
In a large pot over medium heat, add the blended mixture. Cook for 2-3 minutes until fragrant, stirring occasionally.

Stir in the fish sauce, lime juice, and sugar. Gradually add the broth until you reach your desired consistency,thicker for a creamy soup, or thinner if you prefer it brothy. Bring to a gentle simmer.
4. Add Protein:
Add the chicken thighs (or tofu) to the pot and let them cook in the curry broth for 10-15 minutes, until the chicken is fully cooked and tender.
5. Prepare Noodles:
Meanwhile, cook the noodles according to package instructions. Drain and set aside.
6. Assemble:
Divide the cooked noodles between bowls, then ladle the hot khao soi soup over the noodles, including the chicken or tofu.
7. Garnish and Serve:
Top each bowl with crispy fried noodles, fresh cilantro, sliced red onion, and pickled mustard greens. Serve with lime wedges on the side for extra brightness.
